Late night diners in Brisbane have hit the jackpot with chef Luke Nguyen’s stunning eatery Fat Noodle serving up delectable Pan Asian dishes night and day from its grand colonial home in the Treasury Casino.

Not only is this the place to grab a pork congee at 11pm or a pre-theatre Mee Goreng but it makes an unbeatable place for a post mall crawl city lunch. With dishes hovering around $20, menu must-tries are Luke’s signature Fat Pho Noodles of Angus sirloin, brisket, Chilli, Thai basil and rice noodles in a 20 hour broth, the seafood-based Singapore Laksa, Wok-tossed Angus beef with lemongrass, vermicelli noodles, nuts and Vietnamese herbs and the Atlantic Salmon Sashimi.
A firm favourite among seasoned foodies, Luke Nguyen’s Fat Noodle takes Asian-fusion dining to another level. With an endless series of accomplishments under his belt, Australia-born Vietnamese celebrity chef Luke Nguyen has made quite the name for himself over his culinary career. At only 23, Luke realised his dreams by opening his first restaurant, the critically acclaimed Red Lantern in 2002.
All meals come with a heavy earthen pot of jasmine tea and as well as a small boutique wine list, there’s bottled and draught beer and a refreshing range of Asian style drinks including young coconut juice, ginger or sour plum lemonade, lychee and lemon soda or Vietnamese ice coffee.
Just as good as the food is the setting – sit on the arcaded verandah over Reddacliff Place (ideal for people watching), pull up a seat in the gorgeous communal room backed by a bar with back-lit paper feature wall or be seated in the grand dining room under the 3000+ chopsticks hanging garden.

Now comes the modern twist – egg nest and deep-fried soft shell crab sprinkled with crushed nuts and chili flakes ($18).
Worth noting: with the extended hours and at just a short stroll across Victoria Bridge from QPAC Fat Noodle makes a great pre or post theatre diner.

The latest restaurant from celebrity chef Luke Nguyen has opened at the Treasury Casino and Hotel in the city, just in time for last-minute work Christmas lunches and late-night feasts. Fat Noodle is Luke’s second noodle bar, with the first Fat Noodle having opened at The Star in Sydney two years ago.
Dishing up primarily Chinese cuisine, but also touching on Vietnamese, Thai and Malay fare, Fat Noodle draws on both Luke’s Vietnamese heritage and Chinese family history for menu inspiration. This contemporary noodle bar sees fresh produce channelled into both exotic and authentic noodle dishes amongst the revamped Treasury Casino setting.
On the menu, small plates include Vegetarian Spring Rolls of glass noodles, wood ear mushrooms, tofu and carrots and Atlantic Salmon Sashimi with mandarin, perilla, lemongrass and roasted rice powder. Of the noodle soups on offer, the Fat Pho Noodle of Luke’s signature beef broth, thinly sliced Angus sirloin and brisket, bean sprouts, Thai basil, chilli and rice noodles is a stand out, while the Abalone & Chicken Congee with Chinese Rice Porridge tempts our penchant for sea-sourced rarities. Wok and rice dishes also feature in a mix of meat and vegetarian offerings, with a large selection also gluten free.
